In a medium bowl toss the stew beef with the flour and set aside. Heat a dutch oven or heavy bottom pot to medium high heat. Add half of the vegetable oil and add half of the meat, sprinkle half of the salt and pepper. Remove and repeat with the rest of the beef.

- Chop the onion, garlic, carrots, parsnips and celery and set aside. Heat up the oil in a pot and add the chopped ingredients.
- Place the lid on the pot, and stir the veggies every once in a while. Once steamed and the onions are translucent, add passata and stock mix.
- Cover again (leaving the lid slightly ajar) and let it simmer for 10 minutes.
- Sprinkle in the mixed herbs, paprika, black pepper and stir. Chop potatoes and add to the mix then give it another good stir.
- Let it simmer for a further 5-10 minutes, checking the softness of the veggies every so often. Add the gammon meat after 10 minutes and return the lid to the pot and let it simmer for 5 more minutes.
- Place spinach at the bottom of the bowl and spoon a serving of stew on top. Lightly toast some chunky bread to serve and enjoy :)
