Instructions to make Sweet Potato Kulfi:
  1. Heat milk in a heavy bottomed pan and let it come to a boil.
  2. Add sliced sweet potato and let it simmer till the potatoes get cooked thoroughly and milk is reduced to half.
  3. Add sugar and cardamom. Cook till sugar gets dissolved. Take off the flame.
  4. Let it cool then blitz with a blender to remove any lump. It should be smooth.
  5. Add cashew and fill in kulfi molds.
  6. Keep in freezer for 6-8 hours till completely frozen.
  7. Demold and enjoy.

Tips - You can put nuts on top of kulfi and freeze. Kulfi in muffin cups with nuts on top Ingredients to make sweet potatoes. Ghee or clarified butter - MUST have in this recipe. I always use homemade ghee and managed to make my very own ghee in Canada too. Sweet potatoes - Recommended using good quality of sweet potatoes.
