I do not follow any particular recipe to prepare this and like to alter the taste of the curry every now and then. This recipe can be followed to make semi dry curry or gravy. To make a gravy we can use any spice powder or curry powder or sambar powder. Instructions to make Mix veg curry:
- Heat oil in a kadhai… drop in the whole garam.masala… then add chopped onions.. fry till golden then add chopped tomatoes, ginger garlic paste… stir and then add dry masala and add a little water and cook till oil leaves sides.
- Deep fry potatoes and keep.aside.. then add all the cut veggies into the masala and stir for 2 minutes… add 1 cup water and cook for 10 -15mins. Add cream and garnish with chopped coriander.
- Serve hot with roti or rice
This is a Mixed Vegetable curry, and the recipe is more about the sauce than the vegetables you use. In fact, I used slightly different vegetables in the photos vs the video. Just follow the recipe quantities by volume for the vegetables and substitute with what you want. Half-fill a saucepan with cold water and add the potatoes and carrots. If the sauce becomes too thick, add a little water to give you the desired consistency.
