Layer partially cooked basmati rice over it. Cook on a slow dum process, trapping the steam to retain the aroma. The Chicken Dum Biryani which I am sharing today is a very delicious recipe and the steps are so easy to follow. Hyderabadi Chicken Dum Biryani is a very lengthy process but at the same time is the easiest.
Steps to make Hyderabadi dum biryani:
- First of all wash and soak rice for 1-2 hours.
- Take a pan add ghee heat, add cumin seeds crackle, then fry onion slices and green chillies.
- Now add all chopped vegetables one by one, add salt, cook until soft all vegetables, cover it for 4-5 minutes. Now add paneer, all dry spices mix it well. Cook for 2 minutes on medium flame and switch off the flame.
- Now take a pan add ghee heat add bay leaves and cinnamon sticks, big cardamom, cloves, black pepper then add cumin seeds crackle add soaked rice and add salt stir, cook it along with the whole spices and keep a side after draining it.
- After that they cool down, mix all ingredients with vegetables.. Final step is two layer it according to your preference. Last layer should be that of rice and add mint leaves, add saffron on top along with some fried onions.
- Last with fried onion., saffron.. Cover it properly and put it on a medium flame for 10 to 15 minutes then lower flame for next 20 minutes.. Do not open it lid during.. Let all the flavors infuse properly.. Just before serving, garnish with some fried veggies… Serve hot hot the with raita….
