The ingredients needed to make North Indian Biryani:
  1. Take 400 gms soaked basmati rice
  2. Make ready 2 large sliced onions
  3. Take 8 cloves
  4. Make ready 1/4 teaspoon grated nutmeg
  5. Make ready 2 teaspoons garlic paste
  6. Make ready 100 gms chopped potatoes
  7. Get 100 gms chopped bean green
  8. Make ready as required salt
  9. Prepare 1/2 cup beaten yoghurt (curd)
  10. Get 4 green cardamoms
  11. Get 2 sprigs mint leaves
  12. Make ready 1/4 teaspoon kewra
  13. Make ready 8 cups water
  14. Prepare 7 tablespoons ghee
  15. Get 1 teaspoon black cumin seeds
  16. Make ready 2 cinnamon
  17. Prepare 2 teaspoons ginger paste
  18. Prepare 100 gms peas
  19. Get 100 gms chopped cauliflower
  20. Prepare 100 gms sliced carrot
  21. Take 2 pinches powdered black pepper
  22. Take 4 black cardamoms
  23. Get 2 bay leaves
  24. Get 1/4 teaspoon rose water
  25. Prepare 2 tablespoons unsalted butter
  26. Prepare 1 teaspoon black cumin seeds

Our menus are packed with Indian dishes to suit all tastes and freshly prepared with the best ingredients For those who live to eat not eat to live. Considering that Biryani is totally a north Indian dish I was intrigued by the title. I was all the more puzzled when the recipe called for baking. However following the recipe I ended up with a fabulous dish.

Steps to make North Indian Biryani:
  1. Drain the rice under cold running water and soak it for half an hour.
  2. Heat a pan with 4 tablespoons of ghee in it over moderate flame. Fry the sliced onion till golden brown and remove with a slotted spoon. Drain fried slices of onion on absorbent paper.
  3. In the same pan, saute half of the black cumin seeds till they begin to sizzle. Add cloves,cinnamon, half the nutmeg, peppercorns and saute them till they get fragrant.
  4. Add ginger and garlic paste and saute for one minute. Now add salt, pepper, yogurt and vegetables and saute them over a low heat till the vegetables are almost tender.
  5. In the meanwhile, in a separate large pan, bring 8 cups water to a boil with 2 teaspoons of salt.
  6. Tie the remaining cloves, cinnamon stick, cumin seeds, black cardamoms and green cardamoms in a piece of muslin cloth to make a small bundle (potli) and add to the water with bay leaves.
  7. Cook on low heat for 15-20 minutes to allow the spices to infuse the water with their flavor.
  8. Drain the rice, add to the pan and cook till half done. Remove from the heat and reserve the strained water.
  9. Stir the remaining ghee into the rice and set aside.To assemble the biryani, spread half the fried onions at the base of a deep heavy-bottomed heatproof casserole.
  10. Spread half the rice over the onions. Then spread a layer of the vegetables and the chopped mint, onions, cashews and almonds over the rice. For garnishing, sprinkle rose water over the rice. Serve hot!

Really as authentic as I have known it. The quantity of salt is not clear. Biryani can be made from almost anything; lamb, goat, chicken, fish or vegetables to name but a few. The chicken biryani recipe I will give here is of the Awadhi (Lucknow) style from the North East of India. I have put another variant on the site - the Hyderabadi style lamb biryani.
