Traditionally, fish cakes were made to use up leftover fish and potatoes but today, they're a delicious meal in their own right. They're incredibly versatile, using cod, haddock, kingklip or hake as the main ingredient, with more modern recipes adding smoked salmon and vegetables to the delicious mix of ingredients. Make a well in the centre of the ball and push a frozen mustard middle into it, then shape the mash around it to make a smooth hockey-puck shape. Salmon Fish Cakes is a family favorite.

Instructions to make Hake fish cakes:
  1. Chop onions finely. Fry in pot on low heat with oil until translucent.
  2. Chop carrots in quarter disks. Add to onions and cook until soft.
  3. Add capers to onion mix and fry until they slightly open
  4. Let onion mixture cool slightly.
  5. Take your hake fillets, place them skin side down on a chopping board, take a fork and drag through the fish to shred the meat away from the skin (I chopped the skin and added to my onion to fry for flavour). Mix with onion mixture.
  6. Slice spring onion and add to shredded hake.
  7. Toast your slice of bread until crispy. Break bread finely into mixture.
  8. Add the egg, Worcestershire sauce and pepper and mix together
  9. Preheat oven to 160°C. Make patties of approximately 5cm wide and 1cm thick.
  10. Bake in oven for 15-20 minutes turning halfway. Take out of oven. Best served immediately.
  11. Enjoy with some homemade chips

Also have a recipe for an easy homemade cocktail sauce, which goes well with the patties, but it's optional.. The amount of fish cakes you can cook at a time will depend on the size of your frying pan. This firm, white fish is similar to cod and has a flaky texture and subtle flavour. Serve it grilled, poached or baked with strong flavour accompaniments like curry or tomato sauce. Flake the fish into the mash, then add the red onion, parsley, cheese and salt.
