A pinch of fruit salt helps to give the idli a soft texture and good mouth-feel.

The ingredients needed to make Spinach idli:
- Make ready 2 cups idli rava
- Get 1/2 cup urad dal
- Take 1 bunch spinach leaves
- Prepare 7-8 cloves garlic
- Get 1 inch ginger
- Take 5-6 green chillies
- Prepare 1/2 tsp Soda
- Prepare 1 tsp Jeera
- Prepare as per taste Salt
- Take Handful coriander leaves
The same moong dal batter can also be used to make healthy pankis and pancakes. Wash the spinach leaves and keep aside. When cooled, grind them in a blender/mixer. Take half of the idli batter in a bowl and transfer the spinach puree into the bowl, add red chilli powder and black pepper.
Instructions to make Spinach idli:
- Soak idli rava in warm water.
- In another bowl wash and soak urad dal for 6-7 hours.
- After 6-7 hours drain the water from both and add in mixer jar.Blend into a smooth batter.
- Now cover and rest in warm place for 6-7 hours for fermentation.
- Then wash and blanch the spinach leaves for 5 mins. And put it in cold water.
- Then in a mixer jar add blanched spinach leaves, green chillies, ginger, garlic, coriander leaves and grind into a smooth paste.
- Now add salt, Jeera and spinach paste in the idli batter and mix well.
- Then add soda and mix slowly.
- Now add the batter into idli moulds and place the idli plates into steamer and steam for 10-15 mins.
- Serve with coconut chutney.
Your spinach idli batter is ready. To prepare beetroot mixture Mix the idli batter & spinach puree. If using homemade batter, dont add any/much water during grinding. If using store bought batter, skim the water that floats on the top. We need a thicker than usual batter for best results.
