- Make ready 1 cup Rice (soak for an hour)
- Prepare 7-8 Cauliflower florets (small florets)
- Make ready 1 Carrot (vertically chopped)

- Make ready 2 tablespoon Ghee
Take out chicken pieces & set aside,strain chicken stock (yakhni) and reserve for later use. In a pot,add cooking oil,onion and fry until light golden. Add cinnamon sticks,green cardamom,black cardamom,black peppercorns,cumin seeds,cloves and mix well. Add ginger garlic paste and mix well.
Instructions to make Vegetable Yakhni:
- Heat oil in a frying and fry all vegetables one by one accept tomato and capsicum.
- Take a bowl, combine curd, all powdered spices and 2 tablespoon of oil in it and mix it well.
- Now heat oil in a pressure cooker, add cumin seeds, black cardamom, green cardamom, pepper corn, star anise and cinnamon stick and allow it to splatter.
- Now add curd mixture in it and cook it for 2-3 minutes by stirring it continuously on low flame.
- Now add all fried vegetables, tomatoes and capsicum in it and stir it well.
- Then add soaked rice and cook for a minute or two then add water as per the need and cook it for one whistle.
- Now allow pressure cooker to release it's pressure then add ghee in it and mix it well.
- Your vegetable yakhni is ready to serve now.
