  1. Make ready 1 cup Rice (soak for an hour)
  2. Prepare 7-8 Cauliflower florets (small florets)
  3. Make ready 1 Carrot (vertically chopped)
  4. Prepare 1 Capsicum (small size, diced)
  5. Take 3 Potato (cut in halves)
  6. Take 2 Tomato (diced)
  7. Make ready 1/2 cup Curd
  8. Prepare To taste Salt
  9. Prepare 1/4 teaspoon Turmeric powder
  10. Get 1 teaspoon Red chilli powder
  11. Take 1 teaspoon Coriander powder
  12. Prepare 1 Black cardamom
  13. Get 3-4 Green Cardamom
  14. Prepare 1 Cinnamon stick
  15. Get 1/2 teaspoon Cumin seeds
  16. Take 1 Star anise
  17. Take 6-7 Pepper corn
  18. Take Oil
  19. Make ready 2 tablespoon Ghee

Take out chicken pieces & set aside,strain chicken stock (yakhni) and reserve for later use. In a pot,add cooking oil,onion and fry until light golden. Add cinnamon sticks,green cardamom,black cardamom,black peppercorns,cumin seeds,cloves and mix well. Add ginger garlic paste and mix well.

Instructions to make Vegetable Yakhni:
  1. Heat oil in a frying and fry all vegetables one by one accept tomato and capsicum.
  2. Take a bowl, combine curd, all powdered spices and 2 tablespoon of oil in it and mix it well.
  3. Now heat oil in a pressure cooker, add cumin seeds, black cardamom, green cardamom, pepper corn, star anise and cinnamon stick and allow it to splatter.
  4. Now add curd mixture in it and cook it for 2-3 minutes by stirring it continuously on low flame.
  5. Now add all fried vegetables, tomatoes and capsicum in it and stir it well.
  6. Then add soaked rice and cook for a minute or two then add water as per the need and cook it for one whistle.
  7. Now allow pressure cooker to release it's pressure then add ghee in it and mix it well.
  8. Your vegetable yakhni is ready to serve now.
