- Take 1 cup rice
- Take 1 medium size tomato purée
- Get 1 small onion finely chopped

Vegetable Pulao (Veg Pulav) is a spicy rice dish prepared by cooking rice with various vegetables and spices. In this recipe, assortment of spices, veggies and rice are first sautéed in oil and ghee and then cooked in pressure cooker as you would cook plain rice.
Instructions to make Vegetable pulav:
- Wash the rice well. Soak it in water for 15 minutes. I used sona masuri rice. You can used basmati rice.
- Cooked the rice in pressure cooker with 1 tsp ghee, 2 clove, 1 small stick cinnamon, 2 cardamom, 4 black pepper and 2 cup water on medium flame for 2 whistle reduced the flame to low and cook for 2 to 3 minutes. Switch off the gas.
- Let the pressure released naturally. Open the lid and loosen the rice with fork. Keep it aside.
- Heat the ghee in a pan. Add cumin seeds, asafoetida, turmeric powder, ginger garlic paste and stir. Then add finely chopped onion and fry it well till it becomes golden brown. Then add tomato puree stir and cook till ghee is separating from it.
- Then add half boiled vegetables and stir. I boiled this vegetables in microwave high for 3 to 4 minutes.
- Add coriander seed powder, cumin seed powder, red chilli powder, chat masala and pav bhaji masala stir and mix well.
- Finally add cooked rice, salt and lemon juice. Mix gently.
- Cover it with the lid and cook for few minutes.
- Open the lid. Switch off the gas. Garnish with chopped coriander leaves and serve with curd or raita.
Vegetable pulav has a mix of vegetables and spices. This is a great dish for get-togethers, especially for lunch. If you are not in the mood to prepare a big meal, use vegetable pulav as a one-dish meal with yogurt, pickle, papadam or chutney.
