- Get 1 sweet potato

Melt chocolate on a double boiler. Peel sweet potato and add it to a food processor, along with dates, tahini, almond butter, coconut oil, cacao powder, salt and melted chocolate. Add ground nuts and pulse to incorporate. Cover with the lid and steam until the sweet potato is fully cooked.
Instructions to make Sweet Potato Chocolate Truffles:
- Soak the raisins or sultanas for a few hours until plumped up.
- Bake the potato and leave to go cold.
- Scoop out the potato flesh and combine with the drained sultanas/raisins and orange rind.
- Add enough ground almonds to reach a nice dough-like consistency.
- Roll the potato mixture into balls and dip in melted chocolate.
- Leave to set in the fridge, in little cake cases.
For the chocolate coating. ¼ cup rice malt. ¼ cup almond butter. ½ cup peanut or cashew butter ( I used cashew butter with pieces of peanuts) ¼ cup agave nectar or maple syrup. A pinch or two of sea salt Dip a sweet potato ball into the chocolate mixture, using a fork or spoon to make sure it's completely covered in chocolate. Place truffle back on the baking sheet, and garnish with your extra Cinnamon Sweets crumbs. Repeat until all truffles have been dipped in chocolate.
