- Prepare 1 Carrot cut into cubes
- Get 1 Capsicum
- Make ready 5-6 Beans cut 1 inch lengthwise

- Make ready 1 tsp Cumin seeds
- Make ready 1/2 tsp Turmeric powder
- Get 1 tsp garam masala powder
- Take to taste Salt
- Make ready 1/4 tsp sugar
- Take 4 tbsp oil
- Take 2 tbsp Chopped coriander leaves
I do not follow any particular recipe to prepare this and like to alter the taste of the curry every now and then. This recipe can be followed to make semi dry curry or gravy. To make a gravy we can use any spice powder or curry powder or sambar powder. Meanwhile, in medium bowl, toss bell pepper and zucchini with remaining oil and seasonings.
Instructions to make Mix veg:
- Blanch carrot, beans and cauliflower
- Heat oil in a kadai add asafoetida and cumin seeds saute till cumin crackles
- Add onin ginger and green chillies
- Saute till onion is light broown
- Add red chilli powder andcturmeric fry then add coriander and cumin powder fry nicely now add tomatoes salt and sugar stir well
- Cover and cook till tomatoes are mushy
- Add capsicum, paneer and blanched veggies stir fry for 4-5 minutes cover and cook till veggies are tender, occasionally stir to avoid burning it
- When done add garam masala powder and chopped coriander leaves
Stir into mixture in baking dish. Mixed vegetables aren't really a side dishes that people get excited for. Yet somehow, they always seem to end up on the table in some sort of twisted attempt at "balancing out" an otherwise delicious meal. Of course, there's nothing inherently wrong with mixed vegetables. In a large skillet, saute celery, onion and garlic in margarine until tender.
