  18. Prepare 7 Greenchilies (chopped)

Biryani is an emotion, not just a dish! Vegetarian Dum Biryani is cooked using a special blend of whole spices, spice powders and various aromatic flavors. Instructions to make Vegetable Dum Biryani:
  1. Preparation for marination of all the vegetable - Add 3 cups of curd without water in the big bowl and stir it well till it becomes homogeneous.
  2. Then add salt, red chili powder, chopped green chilies, 2 chopped tomatoes, 2 tablespoon briyani masala and half of the chopped coriander leaves in the curd.
  3. Add 7 tablespoon of oil in the hot pan and golden yellow fry potato pieces. Then add fried golden potatoes in the curd bowl for marination for 15 mins.
  4. Saute and half cook all the chopped vegetables - for that add 5 tablespoon of oil in the hot pan, add all the chopped vegetables such cauliflower, capsicum, carrot, french beans, salt to taste, red chili powder, 2 tablespoon briyani masala and 4 tablespoon of lime juice.
  5. Close the lid of the pan for 15 mins so that all vegetables gets half cooked. Then add all half cooked vegetables in the same curd bowl, mix it well with the curd and let it marinate for another 15 mins.
  6. Add 3 tablespoons of oil in another hot pan to fry chopped onions till they become golden yellow. Add some salt as it helps onion fry homogeneously and then place fried onions in the separate pan.
  7. Boil water separately in the pan and add the rice into it when the water reaches a boiling point. Add 1 Tablespoon of oil to separate the rice before the water boils. 3/4th boil the rice and then strain the water completely from the rice and let the rice dry for a bit.
  8. Dum process : Add all the leftout oil in the hot big pan, add cumin seed, red chili powder, cardamon, cloves half of the marinated vegetables in the pan and close the lid of the pan. And then cook it for on very slow flame for 5 mins.
  9. Then add one layer of rice over the vegetables and sprinkle one table spoon of ghee over it. And then again add another layer of all leftout marinated vegetables over the rice and then again add another final layer of cooked rice.
  10. Sprinkle 2 tablespoon of ghee over final layer of 3/4th cooked rice. Sprinkle kesar mixed in milk over the final layer of the rice to add color to the biryani. Then decorate and garnish the top layer of rice with fried onions, circle piece of tomatoes and sprinkle half of the coriander leaves.
  11. Then close the lid of the pan and place some weight on the top of the lid to further trap the heat. Cook the briyani it on a very slow flame for 10 - 15 mins. Check if the rice is cooked enough and then close the flame.
  12. Serve hot with mixed vegetable raita.

This is my way of making home style Dum Vegetable Biryani that is so apt for a Sunday Biryani lunch or for any family get togethers. Sunday Biryani is a ritual that my children love to follow and on most Sundays I make this Mushroom Biryani as it is the most loved by both of them. Vegetable Pulao is an one pot recipe, where all the ingredients are cooked together in a pan or a pressure cooker, whereas in Vegetable Biryani, Rice and Vegetable masala are cooked separately and then layered together and cooked on low heat with saffron milk, fried onions, mint and coriander leaves. Cover and simmer till the rice is nearly cooked. Most restaurants serve vegetable biryani that is not dum cooked since it is not economical to make it in large quantities.
