  8. Get Salt acc.to taste

Meanwhile, drain the water from the soya chunks and squeeze out the excess water from the soya chunks. When the onions turn pink, add the red chilli powder, salt and soya sauce. Now add the soya chunks and mix well. Add the coriander leaves and saute well.

Instructions to make Soya chilli:
  1. Boil about 4 cups of water and add about ½ tsp salt and the soya chunks to it. Keep closed and let it soak for 10mins.
  2. Drain the soaked chunks and reserve the water. Squeeze them gently to remove excess water and add to the pan. Add salt and corn flour tose well, letting it fry about 5 mins.
  3. Heat the oil in a pan and add the onions, capsicum, green chillies and ginger-garlic mixture. Fry for 2-3 mins on medium heat until the onions get transparent.
  4. Then add the soya sauce, tomato sauce and soya chunks and mix well.Garnish with the coriander and serve with fried roce or chapati.

This recipe uses a plant-based vegan mince as a meat alternative. I find that this gives my chilli a more 'traditional' taste than only using beans, which is another popular choice for vegan chillis. I've used the fresh mince (for example, this mix from Waitrose made from mushrooms, soya, and lentils) and have also used frozen vegan mince.
