  2. Add can of refried beans, mix well.
  3. Once that is mixed together transfer to large bowl.
  4. Add sour cream and 1/2 c shredded cheese.
  5. Heat oven to 350° pour a thin layer of enchilada sauce on the bottom of a 13x9 baking dish.
  6. Stuff the taco shells with meat and bean mixture.
  7. Once dish is full pour remainder of enchilada sauce and top with cheese. Cover and cook for 25-30 mins
  8. I top mine with sour cream, onions, olives and avocado!! Yum!

Making enchiladas is, hands-down, my favorite way to transform leftovers into an easy, flavorful dinner. Tender roasted chicken gets dressed up with spicy, piquant enchilada sauce, covered in shredded cheese, then wrapped in tender tortillas and baked until warm. I made the homemade sauce too and that was the best sauce ever. This truly was an excellent and easy recipe. This one will become a regular meal at my house.
