The ingredients and steps in this recipe are like the classic brownie recipe, but instead of cocoa, matcha green tea powder is used. One important tip I learned while making this recipe was the parchment sling. The intense matcha flavour and vibrant green colour went very well with white chocolate which we then swirled through our signature dark chocolate brownie base. The baked result was an intense matcha flavour that complimented the dark chocolate without overpowering it.

Steps to make Matcha Brownies:
  1. Pre-Heat oven to 160°C or 325°F.
  2. Add flour, matcha, and salt in a bowl. Mix well to combine.
  3. In a bowl, melt white chocolate and butter together over a double boiler or in the microwave until smooth and combined. For microwave, melt in 30 second increments, covering the bowl with plastic wrap, until you are able to mix smoothly.
  4. In a large bowl, beat 2 eggs and sugar together until pale and combined.
  5. Add chocolate mixture to egg mixture. Whisk until well combined.
  6. Sift in flour mixture and whisk slowly just until they are combined.
  7. Fold in any mix-ins that you like. Add as much as you’d liked! For these brownies, I added some white chocolate chips.
  8. Line a 7” X 7” (18 cm X 18 cm), 8” X 8” (20 cm X 20 cm), or 7” round (18 cm) pan with aluminum foil. Pour mixture into pan.
  9. Bake at 160°C (325°F) for 25-35 minutes, depending on thickness of brownies.
  10. Cool before cutting. Enjoy by itself, with a sprinkling of matcha powder and/or powdered sugar, with whipped cream, or with ice cream!

For these brownies, I decided to use the base layer of my Raw Chocolate Brownies and then add the matcha layer on top. These amazing treats are also gluten, dairy and refined sugar free and suitable for paleo and vegan lifestyles. Also, if you like a stronger Matcha taste, feel free to add more of the Matcha powder, but keep in mind that it is very concentrated and you usually don't need to use a lot. After baking the brownies, don't forget to make them cool down! I know the wait is difficult… but it will make the cutting much more easy and satisfying!
