When I was working on this recipe, I was determined to come up with an easy Flourless Brownie recipe. At first, I thought I could tweak my Flourless Chocolate Cake recipe, which uses whipped eggs for its deliciously fudgy texture and meringue topping. But even with a few tweaks, it produced brownies that had a super thick (too thick) meringue topping. Occasionally I share lightened up dessert recipes here.

Steps to make Flourless Brownies:
  1. Preheat oven to 350 degrees F. Grease a nonstick 9x9 inch square baking pan with baking spray and line with parchment paper, leaving a 2 inch overhang on all sides.
  2. Blend the blakbeans, eggs, cocoa powder, sugar, oil, almond milk, balsamic, baking soda, baking powder andcoffee in the blender until smooth and pour into a bowl. Fold in 1/2 cup chocolate chips until combined. Pour the brownie batter into the prepared pan. Sprinkle the remaining chocolate chips evenly over the top of the brownies.
  3. Bake the brownies until a toothpick comes out clean, about 30-32 minutes. Allow the brownies to cool completely before slicing them into squares.

Making desserts light is a challenge, so when it works I'm thrilled! These brownies are so incredibly rich and fudgy you won't believe there's no oil or butter added.
