The ingredients needed to make Scarborough Fair Chicken:
  1. Get 4 piece chicken quters
  2. Get 1 tbsp cornstarch
  3. Prepare 1/4 tsp parsely dry
  4. Prepare 1 tsp sage dry
  5. Get 1/4 tsp rosemary dry
  6. Take 1 tsp thyme dry
  7. Take 1/2 cup white wine

Gather your marinating ingredients, here pictured is thyme and rosemary infused oils. Slice the large chicken breast in half. Mix the marinade, put into a bag that can be sealed, like a ziplock bag. Seal it removing all the air, and set into the refrigerator for at least an hour.

Steps to make Scarborough Fair Chicken:
  1. Put parsely, sage, rosemary, and thyme. In pot with cornstarch and wine I used chardonnay
  2. Heat untill thickens
  3. Put under chicken skin, lightley salt skin
  4. Bake at 350 for 40 to 50 min or untill done
  5. Broil on low 5 min to crisp skin
