- Make ready 2 lb ground beef
- Make ready 2 onions finely chopped

Although, I would have added some carrots and bell peppers but that's just me. Of course you can add extra veggies if you like. It's very easy, especially if you use can beans, and frozen diced onions. Top with the tomato trio: diced tomatoes, tomato sauce, and tomato paste.

- In a large skillet cook the beef, onion, and garlic together until the meat is no longer pink
- Drain off any excess fat and place in the crockpot
- Sir in flour, cocoa, salt, sugar, chili powder, oregano and tomato paste
- Sir in all other ingredients; cover and cook on low for 4 hours
- If you would like the chili thicker, uncover and cook another hour
- Remove the bay leaf before serving
- You could use the instant pot for the above cooking. I prefer to do the above steps in a regular pan on the stove top, then add all ingredients to the instant pot. If cooking in instant pot, cook time is 18 minutes set on manual. At end of time, quick release the steam.
Add the spices and seasonings to really bring complexity and depth of flavor to the chili. Give it a good stir and place the lid on the slow cooker. Cook for at least a few hours (on low or high). Stir browned beef, chili beans in sauce, stewed tomatoes, diced tomatoes and green chilies, onion, tomato paste, brown sugar, chili seasoning mix, and barbeque sauce together in the crock of a slow cooker.
