  1. Melt the butter, stir in the flour on a low heat for couple of minutes and gradually whisk in the plant milk. Keep stirring and it will thicken. Take off the heat and stir in the nutritional yeast and mustard. This is how I would make a normal cheese sauce but with plant-based ingredients.
  2. Chop the veg and cook in a little oil. Add the vegan mince or lentil. Add the chopped tomatoes, garlic and herbs and bring to a simmer.
  3. Prepare the lasagne by adding a layer of the tomato and veg, a layer of lasagne and a layer of white sauce. Top with bread crumbs or vegan Parmesan and herbs.
  4. Bake in an oven for around 35 minutes at 200c. I served in individual dishes with a side salad ๐Ÿ˜Š
