It is usually made with mutton but this vegetarian version tastes as good!. Dhansak generally is made by cooking some meat with a mixture of lentils and vegetables, while the vegetarian version uses just lentils and veggies. Dhansak can be simply spiced to retain the flavors of the vegetables or lentils, or can be flavored with various spices.

Steps to make Dhanshak (veg):
  1. Take all lentils in cooker vessel. Wash trice with water..soak for 1/2 hour.
  2. Wash,peel,chopped all vegetables mentioned in ingredients.
  3. Add chopped vegetables to soaked daals. Pressure cook for 4 whistles.
  4. Cool the cooked mixed dalas, vegetables. Smash them in mixer grinder jar.
  5. In kadhai add ghee or oil,warm it add cumin seeds to splutter,add turmeric powder,green chillies ginger paste,ginger paste, dhanshak masala powder,red chilli powder and saute for few minutes till ghee/ oil separate.
  6. Add smash mixture of cooked Daal vegetables mixture,add salt to taste, squeeze lemon juice. Mix well,cook for few minutes.
  7. Serve hot nutritious Dhanshak (curry) with jeera rice or buttered toast bread slices.

Heat the vegetable oil in a separate pan and cook the mushrooms until golden brown all over and they have reabsorbed any liquid in the pan. Add a splash of water if too thick. You can add a splash of cream at this point if desired. Serve with boiled rice, naan bread or pup odium or jacket potato. Dhansak is a famous Parsi dish.
