- Take 3 bunches Kolmi shaag (water spinach)
- Take 1 raw banana, boiled & cut into small cubes,
- Prepare 1 onion, chopped
- Make ready 3-4 garlic cloves, chopped
- Prepare 2 tbsp mustard oil
- Make ready 10-12 bori / mangodi / vadi
- Prepare 1 tsp kalonji (nigella seeds)
- Get 1 dry red chilli, broken
- Prepare to taste salt
- Make ready 1/2 tsp turmeric powder
- Take 1 tsp roasted cumin powder
As in summer, the young tender shoots arrive in the market. Now add in chopped Ung choi leaves or kolmi shak. Let the water evaporates and keep on stir/frying the green vegetables till they shrink in volume or release lots of water. Then let it slowly cook well.
Steps to make Kolmi Shaag Bhaja (Water Spinach Stir Fry):
- Discard the stems of the greens and chop finely. Keep aside. Heat oil and fry the vadi till golden brown in colour. Drain and keep aside. When cool, crush it coarsely.
- Temper the same oil with red chilli and kalonji. Saute for a few seconds. Add the boiled raw bananas and fry for a minute.
- Then add cumin powder & turmeric powder. Saute for a minute.
- Then add the onion and garlic and continue to fry till light brown.
- Add the chopped greens & salt. Fry on a low flame till they are cooked & dry.
- When done, add the crushed bori / vadi and give it a stir. Serve hot with plain steamed rice or chapatis.
