  1. Purée the spinach very smooth. You can filter and use only the juice if you want. I used the purée as is, so as to not loose the healthy fiber. Add it to the maida with half tsp of salt and make a soft pliable dough. Set it aside for at least half an hour.
  2. Wash all the veggies clean. Peel the bananas and grate them. I have peeled only the hard exoskin, that is how we cook it in South Indian Cuisine. You can peel it fully till white interior is visible. Do not keep them for long after grating as they turn black.
  3. Heat half of the oil on a high flame and add the grated raw banana. Cook it on medium flame for 3 minutes till slightly soft. Remove from heat and set aside.
  4. Heat remaining half oil on a high flame, add ginger garlic paste, green chilli and cook for half minute. Add the chopped onions and cabbage and cook for another half minute. Now add the soya sauce, salt and mix well. Switch off the flame, add already cooked raw banana, chopped spring onion greens or cilantro and give it a good mix.
  5. Roll thin 4-5" diameter rotis out of the dough set aside earlier. Add a tbsp of stuffing..
  6. Apply some water on the edges of the roti and seal the Momos in your desired shapes. I made two shapes. Keep the sealed Momos covered with wet cloth till all are ready for steaming else Momos will become dry.
  7. Heat water in a steamer. Apply oil in the steamer pan. Set the Momos in it and steam it for 15 minutes. You can also steam them in Idli cooker or pressure cooker (without whistle).
