  6. Get 2 Green onions, chopped

  9. Take 1 egg
  10. Prepare salt and pepper (if you removed to much of the salt from the fish)
  11. Take 2 cup oil for frying
  12. Get 2 garlic cloves,minced

Saltfish Fritters Directions In a large bowl place counter flour, flaked saltfish, chopped onion, escallion and diced tomatoes and mix well. Gradually add water to make a smooth batter, then egg (if used).

  1. Wash and rinse the saltfish, then boil/cook the salt fish, drain then bring to boil again, cool then continue with the rest of the recipe (this is to mainly cook out all that extra salt)
  2. Drain and rinse the can of ackee and set aside.
  3. Using your hands, shred the saltfish in a large bowl
  4. Add the rest of the ingredients, except the ackee and oil and mix to combine.
  5. Slowly fold in the ackee, trying not to mush it too much (you want some bigger pieces in there)
  6. Heat the oil in a pan to medium, drop spoonfuls of mixture and fry until golden brown. ENJOY! 😊

To prepare the dish, salt cod is sautéed with boiled ackee, onions, Scotch Bonnet peppers, tomatoes and spices.
