Don't cook all the eggplant at once, keep repeating the process until it's all cooked. Add the sliced onions and season with a teaspoon of salt.   2. In wok add oil for deep frying first deep fry potatoes for 5 min thrn take it away & keep aside.
  3. In same wok then fry bringal for 5 min then drain it & keep it aside.
  4. Remove carefully oil from wok & add only 2 Tsp of oil in wok saute chopped onion in it thrn add mustard seeds, turmeric, chilli powder, salt & chopped tomatoes & cook for about 5 min on medium flame.
  5. Then add fried potatoes & Brinjal in wok & slowly stir it with caution & cook on high flame for 2 min then put it on dum for 5 min..
  6. Garnish it with coriander leaves & green chillies..enjoy

When wok is hot, add eggplant in a single layer. The egg plant should have changed in color, the skin wrinkled and the flesh soft. Sear the eggplant in an extra-large flat skillet, versus a round wok. The eggplant need a little time to cook through and get each side brown. This is difficult to do in a wok.
