Every home has its own little tradition of cooking the exact same dish and so taste of the same dish varies from one home to other. While my Mom uses dhone-jire-ada bata, this one solely relies on Paanch Phoron and Roasted Cumin powder (Bhaja Jire Guro) to create magic.

The ingredients needed to make Saag’er Ghonto:
- Make ready 100 gm spinach leaves and tender stems
- Make ready 100 gms basella alba leaves and tender stems
- Get to taste Salt
- Get 2 Tb mustard oil
- Take 1 tbspn paanch phoron seeds
- Take 2 dry red chillies
- Prepare 1 pinch asafoetida
- Get 2 small Bay leaves
- Get 200 gms mixed veggies of your choice (1 carrot,6-8French beans,100 gm pumpkin,1potato,1/2 raw banana,etc)
- Take as needed Water
- Take 1/2 teaspoon turmeric,red chilli,coriander powders
- Make ready 1.5 tspn sugar
- Make ready 1.5 tbspn ginger paste
In this post, I will be sharing the recipe of Kochu Shak er Ghonto aka taro leaf mishmash. RED RADDISH IN SLICE, CHOPPED CORIDENDER LEAVES, SEAM IN CUBE CUT, CHOPPED, SPINACH,GREEN CHILLY, BRINGAL IN CUBE CUT, AND FRY BORI VAJA, TURMERIC POWDER, SALT. With these greens I made a saag/shaak ghonto. My Ma would do this with spinach and call it palang shaak er ghonto (spinach cooked with a medley of vegetables).
Instructions to make Saag’er Ghonto:
- Wash, Deskin and chop the veggies into small pieces/cubes
- Wash and chop the greens and their stems into small pieces
- Blanch the greens covered in 2 cups of hot water until tender
- Heat oil in a wok and add the paanch phoron seeds
- As the seeds splutter reduce heat and add dry red chilli,ginger paste, asafoetida and Bay leaves
- After sautéing for 2-3 minutes, add the veggies and dry spices
- Mix well until combined and cook covered on Low heat for 5-7 minutes
- Add salt and sugar
- Next add the greens with their juices and let the curry cook in the juices of the greens and veggies covered
- Take off heat once he veggies have softened and tender
- Serve warm with steamed ghee rice
For the Palak saag er ghonto my Ma used a spice paste which she called dhone-jire-ada bata (whole corriander-whole cumin-ginger paste). Actually she used this particular paste for a lot of stuff. Palong Shaker Ghonto is basically a Vegetarian dish prepared with various veggies that include Eggplant, Radish, Potato etc. and obviously Spinach plays the lead role! In Bengali, Ghonto stands for a semi massed mixed-Veg and it is mostly tempered with Bengali five spices which are known as Panch Phoron. Here I must mention, I do use the radish leaves as well along with.
