The ingredients needed to make Goat Meat Okra Soup:
- Make ready 5 cups shredded okro/okra
- Make ready 1/2 kg goat meat
- Get 1 big dry fish
- Prepare 4 fresh tomatoes
- Get 8 fresh pepper

- Take 1 cksp palm oil
- Get 2 cup dice ugu leaf
- Make ready 2 knorr cube
Now add the vegetable and stir well. Add all the meat and fish, crayfish, pepper and salt to taste. Cover the cooking pot and leave to simmer and it is ready to be served. Notes: Shaki, Meat, Dry Fish, Iced Fish (Mackerel/Titus) and Stock Fish must not all be used at the same time in preparing the okra soup recipe.
Steps to make Goat Meat Okra Soup:
- Wash goat meat, spice with salt, knorr cube, pepper and parboil once the meat is soft, remove from heat
- Blend pepper and tomatoes and set aside
- Heat up another medium pot and add palm oil to the pot, once the oil is heated up pour in blended tomatoes and pepper and allow it fry for about 5 to 7 minutes, then add the goat meat without the stock
- Add knorr cube and salt, stir in the grated okro and stir continuously till everything is mix together, you can add the goat meat stock if the soup requires water
- After about 3 minutes of okro cooking, add the sliced vegetable leaf and remove from heat immediately
- Serve with any choice of swallow; as always for me its yellow garri
If you can, by all means use all as they will add to the flavour. Goat meat is tough so use a pressure cooker to cook it if you have one. Add the stock cubes, ground ehu seeds and the chunks of onion and start cooking. When the meat is done, remove the chunks of onion. Add pepper, scent leaves or uziza leaves.
