The ingredients needed to make Butter Beans Curry:
  1. Get 1/4 cup spring onion
  2. Take 1 cup butter beans
  3. Prepare 1 tbsp garlic red chilli paste
  4. Prepare 1 inch ginger
  5. Make ready 1/2 cup tamrind pulp
  6. Make ready 2 tbsp Jeggary
  7. Prepare to taste Salt
  8. Take 3 tbsp oil
  9. Get 1 Bay leaf
  10. Get 2 dry red chilli
  11. Make ready 1 inch Cinnemom stick
  12. Take 1 tsp Turmeric powder
  13. Take 1 tbsp Kashmiri red chilli powder
  14. Make ready 1/2 tsp Mustard seeds
  15. Prepare 1/2 tsp cumin seeds
  16. Take 1 tsp curry leaves
  17. Get 1 tbsp Coriander cumin powder
  18. Prepare 1/4 tsp Asafoetida

I have always been very fond of butter beans and love them best cooked as a curry with a slightly sweet and sour taste. This recipe is very simple to make. In a blender or food processor, purée the quartered onion, ginger and garlic to make a paste. Butter beans is my favorite, but we don't get it here often.

Steps to make Butter Beans Curry:
  1. Soak butter beans 8-10hrs. And whistle 7-8add soda and 1tsp oil and salt.Till soft and and mashy. Add 1glass water to pressure cook.. Soak tamrind for 1hr. And churn. For pulp.(Take garlic red chilli powder and cumin seeds and churn to make garlic paste oil)
  2. Now heat oil in a pan add carom seeds mustard seeds cumin seeds bay leaf dry red chilli cinemon stick asofoetida curry leaves. Chopped spring onion white part and garlic paste saute for a min.. Add turmeric powder red chilli powder cumin coriander powder and add buttee beans with same water. Mix well.
  3. Now add tamrind pulp jeggary and salt mix properly if need add 1/4cup water and add salt n grated ginger.Cover and cook on slow flame for 5min. Butter beans is ready. Serve with jowar roti or wheat roti. Garnish with chopped green spring onion. Tasty curry is ready to serve.

So when I saw it in Kodaikanal during our trip last wee. k, bought them. I made butter beans masala with half of it and have reserved the remaining for making gravy/kurma with it to go with rice. This curry goes well with both rice and rotis. Add the butter beans, onion, pepper, garlic, chili flakes, turmeric, paprika, garam masala, chili powder, oregano, and half of the salt. While the curry is cooking, prepare the turmeric rice.
