  15. Take 1 tsp mustard seeds
  16. Make ready 1 tsp fennel seeds
  17. Prepare 1 tsp coriander seeds
  18. Make ready 1/4 tsp asafoetida powder
  19. Make ready 1/4 tsp garam masala
  20. Prepare 1 tsp tandoori masala
  21. Get 1/4 tsp amchur powder
  22. Take 3/4 tsp turmeric powder
  23. Get 1/2 cup chopped onion
  24. Prepare 3 cloves garlic
  25. Take 1 inch piece of ginger
  26. Take to taste Salt

This is a spicy South Indian dish goes well with hot rice and roti's. Wash the eggplants in salt water to get the bitterness out. Make slits in opposite directions on the bottom of the eggplant. Don't remove the crown it is needed.

Steps to make Tandoori-Soyabean Stuffed Eggplant Recipe(Restaurant Style):
  1. Peel the eggplant from three sides. It helps to stuff the eggplants easily & hold there shape after being cooked.
  2. Heat 2 tbsp oil & fry the eggplants till changes colour to brown.
  3. Heat another pan with 2 tbsp oil, add cumin seeds & then chopped onions. Cook till they get translucent.
  4. Add chopped garlic to the fried onions. Add chopped tomatoes & green chillies, stir well.
  5. Add soybean to the mixture & cook it till it gets well combine. Add red chilli powder, grated cheese, salt & stir well. Allow the eggplants & soya bean mixture to cool down before stuffing.
  6. Open the slit.Stuff soybean mixture into eggplant.Seal with wooden toothpicks.
  7. Prepare the gravy- Blend all the spices together in a blender in powder form.
  8. Add ginger, garlic,onion in the same blender & blend again.
  9. In a kadai heat one tbsp oil & add the spice mixture & cook for few mints.Add other spices like asafoetida powder, turmeric powder, garam masala,amchur powder & tanduri masala.
  10. Add 1 cup water to make thin consistency of gravy & then drop stuffed eggplants into it.
  11. Cover the kadhai with a lid & cook on low flame for 4-5 mints. Then switch off the flame.
  12. Soybean stuffed Tandoori Eggplant is ready to serve.
  13. Transfer it to a serving plate & decorate with chopped coriander,onion rings & tomato.
  14. Serve it with phulkas, rotis or rice.
