- Prepare 6 medium sized brinjal
- Take 1 potato
- Get 2 green chillies
- Prepare 1 tbsp grated fresh / tender coconut

- Make ready 1 1/2 tsp sesame seeds
- Prepare 1 tbsp oil
- Take 1/2 tsp Kala masala
- Take to taste Salt
- Take 1/4 tsp turmeric powder
- Get 2 tbsp Chopped coriander leaves
- Take 1/2 tsp cumin seeds
- Get 1 tsp coriander powder
- Prepare 1/2 tsp Cumin powder
- Prepare 1/4 tsp fennel powder
- Prepare 1/4 tsp Jaggery (optional)
- Take to taste Lemon juice
Quarter the brinjal lengthways and cut into small size cubes same as potatoes. Heat the oil in a pan and add the mustard seeds when they start to splutter add fennel seeds. Add ginger, green chili and onions. Cook for five minutes or until the mixture begins to brown.
Instructions to make Brinjal Potato Masala curry:
- Wash brinjal cut in dices and keep in salted water.
- Peel and cut potatoes in dice keep in water.
- In mixer jar add grated coconut, 1 tb spn coriander leaves, ginger, sesame seeds, curry leaves, green chillies make a fine paste. Add water if necessary.
- Heat oil add cumin seeds. Add coconut paste and saute it. Add all dry spices when oil leaves sides add 1 cup water.
- When water stared boiling add brinjal and potatoes in it. Cook it till it becomes soft. Serve hot with roti or rice.
Serve this hot with roti, rice. Baingan masala is a delicious masala gravy using some masala ingredients such as coconut, peanuts, poppy seeds that have been cooked in stir fried brinjals.
