  1. Prepare 1/2 kg big size brinjal
  2. Take 1 big onion
  3. Take 2 big tomatoes
  4. Get 1 tbs ginger-garlic paste
  5. Prepare 1 bunch fresh washed and chopped methi leaves
  6. Take 1 bunch fresh washed and chopped coriander leaves
  7. Make ready 1 tbs jeera and mustard seeds
  8. Prepare 2 green chilies chopped
  9. Get 1 string curry leaves
  10. Make ready 1 tbs vegetable oil
  11. Get 1 tbs sugar
  12. Get to taste Salt
  13. Take Dry spices
  14. Make ready 1 tbs chilli powder
  15. Take 1/2 tbs turmeric powder
  16. Take 1 tbs coriander powder

It can be vangyacha kapa or vangyacha bharit (baingan bharta) or bharlela vanga ( baingan bharwan/ stuffed eggplant). We also add it in sambhars and certain rice preparations like masale bhaat and vangyacha bhaat. Take large green eggplant / Baingan and roast whole eggplant on the stove or in the oven. Once nicely roasted then peel out its skin and mash it up.

Instructions to make Roasted Brinjal veg(Vangyacha Bharit):
  1. Take the brinjal wash it and poke it with knife and put oil and roast it on medium flame. Clean the peels and chop the roasted brinjal with spoon
  2. Keep a pan on medium heat and add oil, put mustard and jeera seeds and let it cracker. Put onion and let it half cooked. Add tomatoes, chilies, Methi leaves and coriander leaves mix and cover it for 5 mins let it cook.
  3. Add all dry spices and mix well. Add roasted brinjal add salt and sugar and mix well but don't make it as a paste. Serve hot with Bhakari and garnish with fresh coriander leaves.

Take whole green chilies and dry roast them in the oil. Dry roast till it changes it's color and get light browning. Take these green chillies in the blender pot and blend it coarsely. Vangyacha Bharit Baingan/vangi/brinjal Bharit is the most famous side dish of Maharashtra which requires very less time for the preparation. The Brinjal which are bigger in size are most preferred for preparing Bharit, Brinjal is roasted on a stove top and hence we get a nice smoky smell to it, this goes very well with bhakri (Jowar roti)..
