For Mandi Spice Mix: In spice mixer,add black peppercorns,nutmeg,mace,dried ginger powder,green cardamom,cloves and grind to make a coarse powder & set aside. Even though it's not made like in the traditional mandi style, it'll taste pretty similar to restaurant bought. Last Friday i made this Mutton mandi recipe, it was a big hit! Usually, when i make mandi i use chilly powder.

Instructions to make Mutton Mandi:
  1. Sub sy pehle jo sabit garam masale liye thay un ko mix kar ke 1 tbsp alag kar ke bareek pees lein aur side kar dein baki garam masalo ko sabit hi rakhein
  2. Aub ek bare patelay main mutton raan dalein aur etna pani dal dein ke raan ache sy gal jaye aur etni yakhni reh jaye ke us yakhni main chawal pak jain
  3. Aub raan ko boil krne rakh dein 15 min bad check krein oper jo jhag a jate hain wo nekal dein
  4. Jhag nekal kar sare sabit garam masale add krein sath hi salt, ginger garlic paste, aur 4 onion moti moti kat kar add kar dein aur 2 hour ke liye cover kar ke slow flame par pakain 90% raan gal jaye aur yakhni bhi reh jaye chawal ke liye
  5. Ab flame off kar ke raan nikal lein aur yakhni ko chan lein aur side kar dein
  6. Aub 1 cup yakhni lein aur us main 1 tsp zarde ka rang dal dein ek oven dish main raan ko rakhein aur ye color wali yakhni raan par dal dein take tandoori color a jaye aur foil paper sy cover kar dein
  7. Preheat oven main ye raan 1 hour ke liye 180 par rakh dein
  8. Ab rice ko 30 min ke liye soak kar lein
  9. Ek pan main oil garam krein aur 1 onion ko gulabi kar ke jo yakhni rakhi thi wo dalein soak rice dalein aur 1/2 tbsp salt dal kar chawal paka lein jab dam ane lage tu yellow food color dalein aur jo 1 tbsp sabit garam masala pesa tha wo oper sy dal dein Khushbo ke liye khayal rahe mandi ke chawal khele khele rahein
  10. 1 hour ke baad oven sy raan nekal lein
  11. Ab ek tbsp ghee garam kar ke badam aur kaju ya akhrot le kar fry krein aur side kar dein
  12. Ab ek bari dish main rice nekalein us par fry nuts dalein side main raan rakhein aur is ke sath salsa rakhe jo mandi ke sath serve kiya jata hai
  13. Salsa ke liye tomato, green chilies, coriander leaves, garlic, salt, zeera mix kar ke blend kar lein salsa ready hain
  14. Delicious mandi ready hai must try krein
