To make the chilli and garlic, dry toast all ingredients, except the Sichuan salt and pepper, in a wok or frying pan. Salt and pepper is one of my favourites dishes; although I prefer to cook the prawns with head and shell on. But the down side is the messiness when eating.. Place the first lot of prawns in the flour mixture and toss to coat well.
Instructions to make Salt n Chilli King Prawns:
- Preheat pan to 180 degrees. Add soy sauce to egg whites along with garlic salt, chilli powder, salt and chinese five spice powder. Marinade in fridge for at least 30 minutes.
- Mix flour, cornflour and baking powder then coat all king prawns well before frying in batches. Cooking only about 1 minute per batch.
- Add sesame oil to a pan, then fry off onion and pepper quickly then add garlic, chilli and soy sauce and stir through. Add prawns, scallions and finish off with coriander.
Shake off any excess, then dip in a bowl of water and re-coat with the flour mixture. Shake off excess and place carefully into. To make the salt and pepper seasoning, combine all the ingredients in a mortar and pestle, grind until a fine powder. Remove the heads from the prawns and take out the intestine track.
