The ingredients needed to make Potato Bread Stuffing:
- Take loaf plain potato bread
- Get no sodium chicken stock (I used homemade)
- Prepare cooked small diced/shredded chicken &/or parts
- Prepare celery salt
- Take poultry seasoning

- Take pepper
- Prepare salt to taste
- Get onions (small diced)
- Make ready celery small diced
- Prepare butter
Stir in the soaked bread, parsley, and seasoning mix. Season to taste with salt and lots of pepper. Place the mashed potatoes in a bowl. Stir in the onion/butter mixture and the bread crumbs, along with the poultry seasoning, summer savoury and some salt and pepper.
Steps to make Potato Bread Stuffing:
- Preheat oven to 350°F
- Cube bread into bite sized pieces. Lay pieces out in a single layer on a parchment lined cookie/baking sheet.
- Bake cubes for 10-15 min. Toss cubes around and bake for an additional 10-15 min or until crunchy. Set aside.
- Increase oven temp to 375°F
- In a medium sauce pan, melt butter.
- Add onion and celery and cook until tender. About 5-10 min. Stirring frequently and watch well so butter doesnt burn.
- Once veggies are tender, add chicken, broth/stock and seasonings. Wisk well.
- Spray a 9x13 deep baking dish with nonstick spray.
- Place bread cubes in baking dish.
- Spoon stock mix over bread cubes making sure u distribute evenly getting a little broth on all top cubes of bread.
- Cover with foil and bake 15-20 minutes or until heated through.
- Serve and enjoy!

- For a sage flavor add 1tsp. Sage.
- You can use vegetable stock insteak of chicken.
- If u want meatless replace chicken with fine shredded carrot and cook with the onion.
You may need more of the herbs or seasoning according to your own individual taste. DIRECTIONS Melt butter or margarine in saucepan and stir in onions, celery and carrot and cook and stir until vegetables are softened and tender.
