  18. Prepare 1 tsp Tumeric
  19. Prepare 1 tsp Mixed dried cumin seeds and coriander
  20. Take 4 Cardamom pods
  21. Get 1 1/2 tsp Ground dried coriander
  22. Get 6 stick cinnamon
  23. Prepare 1 1/2 tsp Whole dried cumin seeds
  24. Get 1 cup Dried fried onions
  25. Take 1/4 cup vegetable oil
  26. Get 4 tsp lemon juice
  27. Prepare 2 tsp Salt

  29. Make ready 4 Cloves

Marinate the chicken with curd, vinegar, turmeric powder, coriander powder, chilli powder and the ginger-garlic paste for an hour or more. Add the marinated chicken increase the heat for few minute saute then reduce the heat and cover and cook until the chicken are tender. In an oven proof dish, layer half chicken mixture and half of the cooked basmati rice and pour over half of the saffron milk repeat the remaining meat mixture and rice.   1. Boil the rice with the above ingridients. ONLY COOK HALF WAY. Rinse the rice after cooking with cold water and set aside.
  2. Boil the lentils in salty water till soft, rinse with cold water and set aside.
  3. Add the Safron to 1/4 cup of water and let it soak for a minute.
  4. Add all the ingredients for the marinaide allong with 2/3 of the lentils and 1/2 of the Safron.
  5. Wash the meat and cut it in to the size you like. Add the meat to marinaide and set aside.
  6. Peel and quarter the potatoes, deep fry then till golden brown. Set aside to cool.
  7. Pre heat the oven to 180'C
  8. Melt 1/2 the ghee in a extra large oven proof pot. Line the bottom of the pot with some lentils and rice. Add the meat and potatoes, leave the marinaide behind in the bowl and mix it with 1/2 of the rice. Layer the marinated rice over the meat.
  9. Layer the rest of the white rice on top of the marinated rice. Sprinkle over the remainder of the ingredients. Safron, lentils, cloves, green chilli, ghee and some fried onions.
  10. Cover the pot with foil (shiny side down) and place the lid over the foil. Steam the pot in the oven for 60 minutes.
  11. Check if the meat is cooked after 60 minutes, if not return the pot to the oven until the meat is done.
  12. Once everything is done carefully separate the layers by dishing the white rice in to one side of the serving dish and the meaty rice on the other side of the serving dish. Serve with yoghurt and salad.
