- Prepare 1 Goat heat
- Get Salt
- Prepare 150 ml palmoil
- Prepare 2 habanero pepper
- Prepare 1/2 handful utazi leaves
- Prepare 2 big onion
- Get 1 teaspoon potash
- Get 2 teaspoon ehu seed
- Prepare 2 stock cubes

Steps to make Isi ewu(goat head):
- Cut the goat head in pieces,but make sure the eyes,ear,tongue are not cut into pieces.
- Remove the brain and fold in a alumnium bag.
- Wash the meat very well with iron sponge,and scrape very well.
- Put the potash in a bowl,add like 4 teaspoon of water and sieve.keep the liquid aside.Cut the onion in 4 chnuks.
- Crack and remove the outer shell of the ehu and grind in a dry mill.Pound pepper with mortat and keep aside.
- Cook the goat head with the the onion and stock cubes.add little water and be topping it up.
- Slice onion in tiny rings and keep.cut utazi leaves and keep as well.
- When the meat is done remove the chunks of onion.mash the brain till is smooth.
- Add salt,stir and cook till the water drys.set the meat aside to cool.
- Pour in palmoil in a clean pot,pour in the sieved potash into the oil.
- Stir with a wooden spatula,as you pour in the potash the colour will be turning to yellow.use little to avoid stomach upset.
- Add pepper,mashed brain,ehu seed,sliced utazi and stir very well.
- Add the goat head to the palmoil paste and stir very well.
- Place it back on the heater and cook for 8minutes.
Isi ewu, goat head in spicy sauce is a delicacy from Igboland of Eastern Nigeria. Similar to Nkwobi (cow foot in spicy sauce) and Homework (goat foot in spicy sauce), Isi ewu is more flavoursome because of the addition of the fatty brain of the goat. I have eaten so much Isi ewu, I could almost identify from which restaurant a plate of Isi ewu was bought in my neck of the woods.
