I have made fried onions in a big batch for my Vegetable Biryani couple of months back if you guys remember. I had some leftover in my freezer. Caramelize the onions: Heat ¼ cup extra-virgin olive oil in a large skillet over medium. Add onions and stir to coat in oil.

  1. Start by chopping the large onion into rings and heat the oil in the pan
  2. Add the onions to the pan and begin to cook on a medium heat
  3. Once the onions have softened slightly, add a little flour and the sugar (optional) then continue to cook until they’re nice and crispy/caramelised. - - If they finish before everything else, take them off the heat and leave them in the pan
  4. Put the lentils in a medium sized saucepan and add enough slightly salted water to cover them. - - Bring to the boil and then reduce the heat and leave to simmer for about 5 minutes
  5. Add the cumin to the saucepan and stir it in with the lentils and simmer for a further 5 minutes
  6. Stir in the rice and add extra water to cover everything in the saucepan again - - Bring back to the boil, then reduce the heat again and cover for about another 10 minutes or until the water has all evaporated
  7. Towards the end of cooking the rice, if you have any leftover oil on the pan from the onions, add this to the lentils and rice and stir it in for extra flavour then leave for another few minutes until it’s all cooked
  8. Once finished, stir half of the onions into the mix and place into a dish to serve
  9. Add the remaining onions on the top and then you’re done! Enjoy

Here, the rice and lentils are steamed together with a plethora of spices, pilaf style, before adding the pièce de résistance–a smattering of freshly fried onions.
