Dhokla is made with rice and urad dal whereas khaman is made with besan. Some people also call this dhokla as White Dhokla and the Besan Dhokla as Dhokla. Steps to make Brown Rice Dhokla:
  1. Wash and soak rice and urad dal seperately for 5-6 hours - grind them seperately. Add little curd while grinding and little water - Add a tsp of salt and mix everything nicely
  2. Let the batter ferment for 5-6 hours (fermentation time may vary based on the weather / temprature). - This batter doesnt need much fermentation.
  3. Once the batter is fermented add sugar, very little salt, baking soda or eno fruit salt, add ginger chilli paste -optional, add little oil and mix everything. - Heat a wok with water.
  4. Grease a plate with oil and pour some batter adding pinch of red chilli powder spreading it all over the plate - Steam the dhoklas for 7-10 minutes. - Serve it with mint coriander chuntey, ketchups or with oil and achar masala. - Yum !
