Instructions to make Masala Brinjal:
  1. Wash Brinjal and cut half in middle then peel potatoes and also cut same as
  2. Stuff 1tsp garam masala grated coconut and coriander powder and salt keep aside,mean while we heat oil in pressure cooker add chopped onion,tomato and saute for while
  3. Then add garlic ginger paste,salt jaggery as per taste then add stuff brinjal and potatoes add enough water to cook cover lid and cook 2to3 whistles
  4. Ready to serve with Bhakri,chapati as you like it's very yum…

This is one seriously tasty vegetable curry. Doesn't matter what you call it. This Eggplant curry is not for the faint hearted! Eggplant (Brinjal) is roasted rather than fried for a healthier yet equally delicious alternative (high temp does the trick here), then simmered in an intensely spiced Indian curry sauce so it sucks up the flavour and partially collapses to create a big pot of juicy (delicious) mush. Stuff the slit brinjals with prepared masala.
