  2. Cook the rice seperately in water, until tender. Mix the rice with the above mentioned fried veggies plus add small squares of smoked cheese.
  3. Mix the eggs with the flour,the consistency must be like pancake butter. Shape small balls of the rice-veggie-cheese mixture, and one by one put them in the egg-flour mixture for a second to cover the balls well
  4. Roll the balls in breadcrumbs and fry them in hot oil until crispy

My absolute favourite way to serve these Arancini, Italian Rice Balls is with a delicious Marinara Sauce. Or you can simply use your own favourite Tomato Sauce. Another filling is a Sicilian-style type one with meat ragù and peas. Even a vegetable filled one is quit yummy. Add wine and cook, stirring often, until pan is almost.
