Mango sandesh recipe has been lying in my drafts since the past four weeks. 🙂 I am back from my break with a delicious, melt in the mouth, classic Bengali dessert that has the infusion of two of my favorite ingredients, chenna and ripe mango pulp. I have used homegrown mango pulp that worked excellently for mango sandesh. Mango sandesh or aam sandesh can be easily made at home with a specific time period to produce the base of this sandesh and later stuffed with homemade mango jelly.
To get started with this particular recipe, we must prepare a few ingredients. You can have jelly filled mango sandesh using 6 ingredients and 8 steps. Here is how you cook it.
The ingredients needed to make Jelly filled mango sandesh:
- Get 1 litre full cream milk
- Prepare 2 medium size lemon
- Get 2-3 medium sized mangoes
- Prepare 1 cup sugar
- Prepare handful cloves
- Prepare 3-4 tablespoon honey
This mango flavoured dessert is very unique, tasty and easy to make sweet recipe. Sandesh is a very famous mithai or sweet in Bengali cuisine. This uses curdled milk or paneer or cottage cheese, sugar and some flavourings. This recipe is a twist of the traditional recipe.
Steps to make Jelly filled mango sandesh:
- Boil 1 litre full cream milk. Turn off the gas. - Squize the lemon juice. Add 2/3 tablespoon water.Add this lemon juice water mixture to the milk Gradually and keep mixing till the milk cuddles fully.
- Strain the chana over a muslin cloth. Wash it throughly under running water to get rid of the lemony smell. Hung it for 30 minutes.
- Smash the chana with the help of palm to make it smooth.
- Wash and cut the mangoes into cubes. Blend them smoothly to a puree.
- Add 1/2 cup sugar and 1/4 cup mango purée with smashed chana. Heat a pan. Cook the chana mix at low flame. Stir continuously till the Mixture starts leaving the pan and settled together. Turn off the gas. Let it cool.
- Mix 1/2 cup sugar and honey with 1 cup mango purée. Heat a pan. Cook the mixture till it form a thick jelly.let it cook.
- Make equal sized smooth ball from The chana mix. Flatten them put 1 teaspoon mango jelly at the centre. Carefully close it and give the shape of mango. Put 1 clove on top.
- Delicious jelly filled mango sandesh is ready to serve.
Boil milk in a heavy-bottom pan. When it starts to boil, simmer the heat and add lemon juice. Cook the mango on low flame till water evaporate completely. Mix paneer, sugar and mash with your palm. Use the heel of your palm to make it smooth and soft.
