  2. Gin: In a pot bring tonic to a boil. Remove from heat and whisk in gelatine and gin until dissolved. Let cool. Once cold slowly pour over kiwi jelly and let set in the fridge.
  3. Watermelon: Melt gelatine in warm water. Blend watermelon and strain. You should have between 125-150ml juice left after straining. Mix gelatine into watermelon. Pour over gin jelly and set overnight in the fridge.

It's spirit-forward, botanical from the gin and tangy from lemon, and just sweet enough. Summer in a jar, this watermelon jelly is sweet and smooth.
