This is one easy eggplant dish. I make dahi baingan as a side dish. It goes well with rice or khichdi recipe. Dahi baingan can be made in two ways.

Steps to make Sliced brinjal in curd:
  1. First wash and cut brinjal in slanting shape and drop in water immediately as the brinjals turn over their colour and get black
  2. Take out of water and drain on a kitchen towel napkin to absorb water..Take a carrot peel and cut long thin straws out and deep fry in oil and keepaside for final garnishing
  3. Take a mixture blender and blend roughly chopped onion, tomato, ginger and green chillies
  4. Take a pan and heat oil in it.Deep or shallow fry the brinjals at high flame by turning over from both sides till get golden brown colour(don't slow the flame as the brinjals will soak oil)
  5. On the other side of flame, heat oil in a pan and splutter cumin seeds add blended mixture and cook on medium flame till the masala releases oil keep on stirring in between.Add salt, red pepper powder, freshly ground black pepper, chat masala, garam masala in it.Give a good mix to incorporate the spice with onion tomato mixture. Flame off
  6. Time to layered the dish,beat the thick curd with a spoon and start layering
  7. Take a bowl or container of your choice and spread some stir fry masala on the surface then arrange fried brinjal pieces and drizzle curd over it with the help of a serving spoon.. Sprinkle a pinch of chat masala and black pepper over curd and arrange 2nd layer of brinjals then masala and then curd and sprinkling of chat masala and black pepper again.. Repeat the same process with all the layers till the brinjal slices get finished save 2-3spoons of curd for top garnishing
  8. At last layer arrange some brinjal pieces, masala and drop little by little curd over it (brinjals and masala should slightly be visible).garnish with coriander/cilantro leaves and fried carrot straws in the centre
  9. Tadka-heat 1spoon of oil in a tadka pan and add a pinch of red pepper powder, garam masala and fry red chilli for about 30 seconds and immediately pour chilli oil on top
  10. Serve hot with naan, chapatti or lachha paratha
