- Cut the goat head into pieces wash the meat with warm salty water
- Slice the onion and set aside
- Put the powered potash into a bowl. add a small quantity of water and stir well.. pass it through a fine sieve and set the liquid aside..
- Crack and remove the outer shell of the nutmeg then grind
- Cook the goat head with the chunks of onion the stock cubes and add little water..
- Pour in your onion into the cooking pot
- Cut half of the utazi leaf into tiny slices. cut the other half into tiny slices. the first will be used for garnishing while the latter will be added into the palm oil paste.
- When the meat is done, remove the chunks of the onion, take out the brain and mash it up till its smooth.
- Add salt, stir and cook till all the water dry's off..
- Set the meat aside to cool..
- Pour the palm oil into the a clean dry pot pour in the potash mixture into the oil.. stir till the oil turns yellow.
- Pour in your pepper, mashed brain, nutmeg and the utazi leaf that has been cut into tiny pieces.. stir very well
- Add the goat head to the palm oil paste and stir very well..
- Put it back in the cooker and heat..
- Your isi Ewu is ready garnish with the tiny slices of utazi leaf and onion rings
