- Dry and cut tofu into small (½ inch or so) cubes
- In a skillet, heat a generous tablespoon of coconut oil and add tofu and sauté on medium heat for 7-10 minutes or until golden brown
- In a separate pan sauté bok choy mushrooms in coconut oil for 3-4 minutes or until soft, then add garlic and ginger
- Meanwhile, bring vegetable broth to boil in a separate pot and add ramen noodles. Bring back to boil and then cover and reduce to low heat, cooking for about 4 minutes, or as per instructions on noodle package.
- In a bowl, combine tofu and veggies and then pour over noodles and broth. Add soy sauce and garnish with chopped cilantro and green onions.
Save seasoning packet from ramen noodles for another use. The dressing was the perfect complement to the bok choy and green onions and the crispy noodles gave it the perfect crunch. I added some grilled salmon to the salad the next day for lunch and it was even better. Cook noodles according to the package instructions. Drain and rinse in cold water.
