- Chop chorizo into rounds and fry on olive oil.
- Add onion and garlic and fry until translucent.
- Add tomato purée and fry for a few minutes.

- Add tin of tomatoes, lemon juice, salt and pepper and sugar. Cook on high heat until most of the liquid has gone. Check for seasoning. Add fresh chopped parsley.
- Whilst the sauce is cooking, toast thick slices of bread on a griddle pan until they crisp up.
- Pile the sauce on top of the toast and crumble over feta.
Stir in the cannellini beans and check the seasoning. Stir the spinach/kale into the chorizo/beans to wilt in the heat of the sauce. Serve the beans and greens on sourdough toast, topped with the fried egg. Sprinkle with pul biber or sumac, if you like. When sauce is reduced, and it has been seasoned to taste, then serve on the toasted bread and top with the chorizo.
