I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

  2. Take 2 3/4 cups all purpose flour

  19. Prepare 250 g bacon
  20. Make ready 1 can butter beans (mashed)
  21. Take 100 g cheddar cheese (grated)

Enchiladas con mole, instead of chili sauce, are served with mole, and are also known as enmoladas. Enchiladas placera are Michoacán plaza-style, made with vegetables and poultry. Enchiladas poblanas are soft corn tortillas filled with chicken and poblano peppers, topped with oaxaca cheese. Pour in the red sauce, chicken broth, cilantro, salt and pepper.

Instructions to make Enchiladas:
  1. For the tortilla dough: mix the flour, baking powder and salt. With your fingers rubbing butter into the flour mixture.
  2. Add water and knead for 5-10 minutes to form a smooth dough.
  3. Let rest for 30 minutes under a wet cloth.
  4. Note: the dough makes around 20 tortillas, I made some extra to snack in between (quesadillas) and for lunch the next day.
  5. Preheat the oven to 180’C.
  6. Fry the bacon in a pan, set aside once cooked.
  7. For the sauce: finely chop the garlic, chillies and spring onion. Fry in a pan.
  8. Add the tomato paste and cook for 1 minute.
  9. Add all other sauce ingredients and cook sauce over low heat for 10 minutes.
  10. Rolling the dough: once rested, form small balls of dough and roll out on floured surface.
  11. Cook tortillas in a non-stick pan for 1 minute on each side. Keep soft to fold enchiladas easily.
  12. Place tortillas on a surface. Fill with bacon, beans, 1 tablespoon sauce and 1 teaspoon cheese.
  13. Fold the enchiladas in pockets, place in a greased oven dish and cover with sauce and cheese.
  14. Bake in the oven for 20 minutes and enjoy!
  15. Best served with a shot of tequila 😋

Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down. Then pour any remaining sauce on top of the enchiladas and sprinkle on some extra cheese. Bake uncovered until the enchiladas are cooked through and the edges of the tortillas get slightly crispy. Top with remaining enchilada sauce and cheese.
