- Peel wash and cut karele/bitter gourd than rub with salt and take a rest for 4-5 hour. Now peel wash and cut potatoes into two slices.
- Now heat a pan add oil after heating oil, deep dry to karelas/bittergourd and potatoes in medium to low flame.
- Now peel onion, garlic and take mixture grinder and add chopped onion, garlic and tomato and grind it.
- After then in same pan remove extra oil and then add cumin seeds or sauté for few seconds then add onion tomato paste in pan. And cook it for medium-low flame when oil release with masalas add dry spices turmeric powder, red chilli powder, salt, coriander powder and garam masala powder in paste.
- Mix it well add few drop water and cook for 2-3 min more. Than off the flame and let it cool down after than stuff this masala in fry karele/ bittergourd and remaining some masala for sabji.
- Now in the same pan add we use remaining masala for sabji in this masala add 2-3 tbsp water and add karake/bitter gourd and potatoes and mix it.
- Now close the lid of pan and cook karele/bittergourd and potatoes to medium to low flame for 5-6 min more. Now transfer our karelas/ bittergourd and potatoes sabji in another bowl.
- Serve this with arhal/tuarl daal, rice and roti.
- Note:- If we cook only stuffed karelas/bittergourd then we can also store them to 3-4 days easily.
