  9. Add remaining half & half, constantly stirring.
  10. Continue heating mixture on low heat for approximately 5 minutes.
  11. Slowly add cheese into sauce while stirring. The cheese should not stick at all. Continue adding remaining cheese and mix until cheese is completely melted and there is a consistency.
  12. Place bacon into oven and bake for 10 minutes.
  13. Chop up bacon and scallions.
  14. Slowly mix pasta into cheese sauce. Place pasta into a Pyrex dish.
  15. Place Colby Jack cheese on top of pasta, top off with bacon and scallions.
  16. Bake pasta at 450°F for 35-40 minutes.
  17. Cheese should be browned and crisp when removing pasta from oven. Let it sit for 15 minutes and then serve.
