This Italian Sausage and Cabbage Soup was born out of convenience (and cold weather!).   1. In large sauce pan put stock, cut up cabbage, onions bring to a boil and cook till soft
  2. Brown sausage with garlic
  3. After onion and cabbage are cooked add sausage to large sauce pan.

  5. Let simmer for about an hr. Add more stock or water if needed.
  6. I tend to not cook with pasta because noodles soak up water. So I will cook it on the side and put a table spoon of pasta at the bottom of my bowl and poor soup over. I also freeze this and reheat in crockpot. U can also cook it in the crock pot! Just cook sausage first.

Use a slotted spoon to transfer the sausage to a separate plate, and set aside. Add the olive oil, leeks, carrots and celery to the pan, and stir to combine. Add water, cabbage, sausage, tomatoes and brown sugar; bring to a boil. Add beans, vinegar, salt and pepper. I had chicken breasts and cabbage on hand.
