I have made this like the combinations from the Gulf region by adding spices like loomi (dried lime). Keep this spice mix handy to add to soups, too. Baharat can be used to season meat, chicken, and fish. It is also used to flavor soups and stews.

Steps to make Baharat Pork and Rice:
  1. Add rice, crushed red pepper flakes, 1 tsp garlic powder and chicken stock to the rice cooker. If your rice cooker has a steaming basket add the broccoli now, otherwise thaw in the microwave and mix into the rice when it's done.
  2. Add a little oil to a large skillet and put in the ground pork, baharat seasoning and 1 tsp garlic powder.
  3. Use a spatula to break up the pork into as fine of pieces as possible making sure the spices are well mixed throughout.
  4. Mix up the cornstarch slurry and add to the pork. Turn the heat up a bit to make sure the slurry bubbles lightly to thicken and the raw taste cooks out.
  5. Once the pork and cornstarch has come together to the desired consistency spoon over the rice and broccoli.

However, my favorite way to use Baharat is in Chicken Biryani (Spicy yellow rice, loaded with shredded chicken, meatballs, potatoes, and onions). You can also use Baharat to season the filling in Assyrian Egg Rolls (Bourak), and in Kubba filling. Great for barbecues or for mid-winter dinners. We have been making chicken kababs in yogurt-spice marinade for years, but the Baharat spice mix makes it easier. Yogurt is a great tenderizer for meat.
